Completely agree. French toast is so hit and miss I rarely order it. If I trust the place to do a good waffle that's a nice choice but any roadside diner can make pancakes I can choke down.

Honestly, I just looked up recipes for waffles and pancakes. The main difference I'm seeing is some waffles have vanilla extract... and that's basically the main thing. I prefer waffles, largely because of the texture and the little syrup pods, but otherwise I can go with either one.
Put some vanilla and cinnamon in your French toast eggs. It will blow your balls off.

Pancakes are the safest bet. There's less variation than FT or waffles, so even the worst pancakes aren't that bad.
Oh man, the variance you can get on French toast. Sometimes it's heavenly and sometimes it's just so soggy and chewy and tastes like scrambled eggs.

I don’t really like the sweet breakfast pastry concept. I guess waffles, preferable cornmeal or Belgian waffles. I’d much rather have a breakfast burrito with green chile or huevos rancheros though.

Not even questionable. Pancakes turn into a disgusting gelatinous mess after like 10 seconds with syrup. They're too dense, so you feel like shit after eating them.

Personally it's Waffles > Pancakes > French Toast, but I like all three. That being said, if I'm in the US, it's none of the above. Those barbarians don't serve these items with maple syrup which is abhorrent to me as a Canadian.
I don't think I've been to a breakfast place that doesnt serve maple syrup with any of these.
With that being said tho, I never order any of these while I'm out to eat either because all of it in the US is low quality garbage oversaturated with sugar.
I always thought I disliked waffles until I was drunkenly peer pressured into ordering one in Brussels. Ugh. So good!
If I am cooking, French Toast because I can ensure quality. If my wife is cooking, Belgian Waffles because the waffle iron prevents user error. If I am at a restaurant, pancakes because they are always different and very few places make them in a way I dislike.
They're all great, but much too heavy for a breakfast. I'll take some yoghurt with a handful of nuts or cereal or dried fruit. Maybe I'll take some pancakes for lunch later.
French toast. I've developed a terrible (as in, frighteningly bad for you) and amazing recipe by cranking up the fat content from other recipes and adding a little more spice.
6-8 slices of bread (decently thick Italian bread is what I usually use, but obviously French bread is good for French toast) 4 eggs 4 Tbsp butter ¼ cup half & half 1 Tbsp real maple syrup (don't you dare use fake stuff) 1 tsp cinnamon ½ tsp vanilla extract ¼ tsp nutmeg
Leave the eggs and butter out so they get to room temperature. If the butter isn't super soft, melt it.
Whisk everything (except the bread) together well. If the ingredients are too cold, the butter will solidify in chunks. It's also a good idea to whisk between batches to keep everything evenly suspended. Dunk the bread slices for good coverage and cook them up on a griddle or pan preheated to medium heat until lightly brown on both sides. Top the finished product with maple syrup or vanilla ice cream. Or both. Schedule a cardiologist visit. Enjoy.
