Can someone explain why coffee does that? I've not been able to find an explanation while being on the toilet at work.

Here is a good article that explains it. Interestingly coffee promotes the urge to poop in at least one-third of the population and tends to impact women more than men.

Only coffee does this to me though. It's got to be a combination of things. I know coffee is higher in caffeine than most other drinks, but I sometimes take a caffeine pill, which is even higher, and it has never caused the coffee shits.

There's something else in coffee that causes the explosive GI tract feeling. I know because I get the same effect. And I still drink it, I just have learned to deal with the pain and fullness "down there." I drink diet coke, and it sometimes causes the same thing if I drink too much of it.

I still drink it too. It only causes the effect probably 1/10 times or so though for me. I don't get it from anything else I've had so far.

For me, coffee always causes GI irritation and "stimulation," even though I only fill my cup 1/3 with actual coffee and the rest with water. Diet coke can cause the same thing in me, but without it I get massive "withdrawal" headaches. And, my doctor actually recommended I keep on the caffeine to stave off the migraines I get almost daily.

I drink decaf and it still has the same effect for me.
