You're doing yourself a disservice!
I tried out her Overly Attached Girlfriend antics just once, and then accidentally killed her as the Durge. Oops.

Yeah, did that too. I kind of didn't want to try again after that.
You have to betray the grove to recruit her. You lose a lot to get her.
(I got desperate and read the wiki) apparently if you just knock her out you can recruit her later. I haven't gotten far enough to see it work though.
I do it every time because she has some of the best dialogue in the game. She is legitimately funny. Also, soul brand is an incredible bonus action.
Knock her out in the goblin camp. She will be alive in Moonrise in act 2. Ensure she is spared by Ketheric and the orc lady. In the dungeons, take over torturing her from the evil gnome ladies and turn on them with Minthara. Then, lead her out to safety and recruit her. Best decision you can make. Save before the dungeon part because it bugs out half the time.

I never finished playing, but I picked Lae'zel from the start and I can't imagine liking another choice more.
I feel like this definitely deserves Astarion, the literal vampire spawn.
It needs more burnt marks for Karlach
