I’ve kinda just been searching here but there’s also this:
https://lemmyverse.net/communities
Keep in mind beehaw has defederated with lemmy.world so might not be worth trying to follow any of those communities from a lemmy.world account.

I used this as well.
Though content has really increased, I still find a great way to find new communities is to sort by all and new, then scanning the posts and looking to see if any are coming from communities I didn't know about. I guess you could do the same with hot or active.
Oh, interesting. I didn't realize beehaw had defederated. Any info on why?
I believe it had something to do with the ease of the lemmy.world sign up process and beehaw is run as a very protected space in the #threadiverse. Someone please correct me if I am wrong.
The Lemmyverse site is good. There is also https://browse.feddit.de which I have used to find a few smaller communities from instances that don't show up on my own home instance (Lemmy.world). Then I can search the specific community name on lemmy.world which makes it visible for anyone else on my instance to find going forward from the main community search.
I use Memmy’s built-in Search function.
Lemmy being fundamentally different than Reddit will never be a one-for-one replacement for Reddit. Things aren't settled on most Lemmy instances. New instances will be started and instances will go offline. There will never be a good answer to how to find a community. It's likely that there were and still are communities on Reddit that you don't know about but would appreciate.
All that said, the best answer right now is to use the various search tools.
