Gnocchi, melting potatoes, hit me with a stew starring the celebrated starch, potato chips, potato salad, white pepper potato soup, latkes, the list goes on! Gonna make latkes tomorrow, now that I remember their existence

Potatos are like the Chris Pratt of the vegetables. In lots of stuff, still tastes the same. Onions are the unsung heros, they can be spicy, savory, or sweet. I had a grilled onion yesterday that immediately triggered the flavor memory of a toasted marshmallow. Hardly anyone gives it recognition but meals wouldn't be the same without them.
