Do Phobos and Deimos ever transit at the same time? And if so, what's the coolest shape they could make?

Yes they can but it would be relatively rare and Deimos is small enough, and orbits far enough from Mars that its apparent diameter from Mars is about 1/10th the diameter of Phobos. So it isnt really much to look at.
