My guess is that Material You applied a colour scheme based on your wallpaper

I hate it. It looks like shit 90% of the time. Just the most horrible colour combos. And with my old ROM you couldn't even turn it off or switch the colours. What a fun feature.
I love the idea, but it does need more work, yeah.
Or maybe less work, actually. Some combinations are just unnecessary, too.
It could be nice and maybe with simpler pictures it actually works so that it all blends well. But with photos I've taken I've had shit luck. A picture with green grass and grey concrete made a colour combo of the most awful shades of green and brown imaginable. None of those colours were in the actual photo either, it just sorta blended it all into colour vomit.
You don't want your ui to be 1980s beige, but like if the plastic has been sitting in a smokers house? Weird.
But yeah, this is material you. Its a feature that makes apps match the colors of your wallpaper, and if you go to "wallpaper and style" in the settings app (at least on my pixel 3, its possible it'd be somewhere else on a phone from a different manufacturer, or potentially even newer phones from google) you can pick other color options
It almost definitely is material you. Go to "wallpaper and style" in the settings and you should be able to change ui colours. Either to a different colour from your wallpaper, or a varied set of predetermined colours.
Did you accidentally change the theme colour? Not sure what launcher you're using but maybe long press in an empty spot on the home screen and see if you can change the theme tint.
I can't remember what it's called, but there is a feature that changes your theme colors to match your background. Changed your background or lock screen lately?
I should add I've had Nova Launcher for probably 10 years and (without having this issue before) changed nothing. I currently have an LG V60, and use IFTTT to periodically update my phones wallpaper to the top post in r/earthporn. Aside from that, I don't change my phones personalization settings and have never seen this happen before. I'm also currently running Android 13.
Usually if I'm gonna be outside doing exercise or labor, I'll flip my phone around in my pocket. It's more comfortable putting the screen against my leg, but it does indeed somehow always manage to wake up when my leg gets sweaty. So if my leg is gonna get sweaty, my phone goes in backwards instead.
There is also the alternate option of disabling certain smart lock features, so that the phone is always fully locked in your pocket. I think just the one about not fully locking if it hasn't left your person. Humans are never fully still, so it basically keeps the phone only partially locked until the second it's completely still for an entire second. I kind of like that feature, so when deciding between that or remembering to turn my phone around, I went with the latter, but if you are in that position alot, it might be worth it to you to disable the feature.
The description is supposed to say night mode/color inverting*/... sorry for the typo.
Might be Material You theming everything to match your wallpaper.
What is Material You? Afaik I have no themes installed, I don't personalize that far. All I have installed as far as personalization is Nova Launcher which I haven't changed anything for, for like 10 years.
This seems to be the official announcement from back when it was released. Material You is like an automatic theming engine in newer versions of Android.
There might be an invert colors option in the notification drawer. Swipe down from the top of your screen and see if you can find anything that might do that.
There is no invert color option in the notification drawer that's specific to those apps. I do have the invert color option in there but have never used it and it's currently inactive.
What phone are you using?
