Pan seared lamb loin chops with pilaf, roast acorn squash and broccoli.

I am working on getting my family back into nice Sunday dinners. It is a habit we fell out of when the pandemic hit. I would really like to get back into having nice dinners with guests again.

I've never had acorn squash. What's it like?

SO good. Not stringy, naturally sweet, especially when roasted like this it gets all nice and caramelized. It’s pretty versatile in lots of different dishes.

Once you manage to crack into it, that is. Need a sharp knife and patience.

Sweet, tender and so flavorful. It's great! I haven't had it in, man... years. I remember it having a somewhat stronger squashy flavor than butternut, which I also love.

I definitely need to make some roasted squash this year!

That looks delicious, really nice combo.
