I'd say your best bet is an independent electronic part shop. Try asking on your local sublemmy/subreddit
We dont really have those now ..Maplin used to have a store 2 miles from here but they all closed down. Bit of a shame.
Your best bet is, sadly, amazon or eBay. There are some small sellers with a Web store, but you'll likely have to buy in the same bulk units as amazon or ebay and likely for more.
With a quick search I've seen Maplin does free delivery in the UK. There's also:

Edit: hobbytronics apparently does a MIDI to DIN box, which is kinda neat.
I think the name "Maplin" got bought after they had financial problems. I'll have a look at those too, though.

For UK specifically, I quite like BitsBox. They have a few pedal kits but will also sell the components you need for most pedals.
For general hobby electronics supplies https://shop.pimoroni.com have served me well over the years. As have https://thepihut.com (& a few others I canβt remember off the top of my head).
Anywhere that sells arduino and/or raspberry pi boards will usually stock a wide selection of parts, & often in smaller hobbyist quantities.
Have fun exploring & planning your project, wish I had the spare time for some side projects at the moment, maybe one day soonβ¦
