I've never thought of pickles in an omelette, but I don't see why it wouldn't work. I've had things like feta cheese in an omelette and it's tangy like pickles.

Yeah, capers work too. I think those are more close flavor wise to a pickle, but thereโ€™s some kind of mental block for me with scrambled eggs and pickles being ok. Idk. Need to try this cuz I love me some good pickles.

It consisted of bread, hummus, scrambled eggs, and different toppings, such as pickles or cress.

What kind of pickles were they? I can see the acidity of the vinegar in the pickles as well as the lemon in the hummus working well with the dish. I of course say this after I just made my family eggs benedict last night, putting a hearty squeeze of lemon into my hollandaise, like Iโ€™ve never had acid/citrus with my eggs before lolol
