I made those too, first time. Cooking the tongue made am amazing broth.
Tongue is criminally underrated
Thinly sliced tongue was SO good. It has such a great texture.
Brings back memories. The old man used to pressure cook beef tongue and then turn it into the most delicious coconut-milk-based curry. Lengua tacos are also super delicious.
When I get tacos, I always get at least one lengua taco when.
But how does it taste?

Amazing the broth is very rich, meat tender, bd tubers full of flavor.
If it's done well, the only difference between tongue and carne asada is that the tongue is more tender.
