Every example ive read about has told of increased risk of birth defects from older sperm

Which has nothing to do with count. Sperm count plays a role at chances of fertilization, not birth defect. It's like taking a single pebble or handful of pebbles and throwing them at the window, which action is likely to break it. Same thing. Age results in DNA degradation, which is what causes mutations and therefore defects.
