Thunderbird on desktop for my Gmail accounts and own domain. Built-in iOS mail app for those on mobile. Outlook web interface for work desktop, and Outlook iOS app on mobile to keep work and personal emails separate.

It's a 10oz burger topped with deep fried chicken tenders, bacon, cheddar, waffle strips, maple syrup drizzle, and raspberry aioli, served on a pretzel bun. Got a Xeon E5-2690v2 with TrueNAS Scale and a Synology DS418. Having used both pretty heavily over the years I can safely say I'm indifferent. The Synology is efficient; the TrueNAS Scale box performs really well with the added bonus of being able to run Kubernetes and Docker workloads. They're both sitting in their respective corners, doing their respective things, with minimal intervention.

I'm in the same age group. Wolfenstein 3D and Doom are the ones I grew up on as well, but the first game that really blew my mind was Microsoft Flight Simulator 4. It was especially cool to me that I could easily fly around the area I grew up in from the starting position at Meigs Field in Chicago.
