I think I ate a fairly similar dish in Paris (15eme). We had some pretty authentic Korean restaurants there and I really enjoyed discovering this food.

As far as I know Samsung makes it incredibly difficult to unlock the bootloader of the phone. And I think it's the only way to do a full backup.
Most of the options described here in the comments are partial backups.
When I was doing this I was using Nandroid to get a full backup and restore it later on.

Android runs on a unix kernel.
I personally think an open source android rom is a good middle ground between running a full linux OS and google's Android.
I don't know what roms are good right now though.
I would probably go for a fairphone and install the non google rom:

Or check if your current phone is supported by any open source Rom.
In any case you will most likely have a lot less apps since you would have only access to non google play services apps. There is a fairly decent choice of apps on F-Droid but your experience will remain limited.

To some extent I think you can do most of that on Lemmy.
You can upload images for your posts (not sure for short videos) and cross-post them to other communities.
Edit: I don't know kbin.social but I suspect it would be more adequate to what you want to do.
Not that it matters but a more accurate title in french would be : "Tartelette aux fruits rouges"
Tartelette = Petite Tarte

I think they mostly crushed the protest and that only a minority of redditors will move and that's fine.
I still hope the reddit IPO will be a failure so that it shows it's not a good thing to alienate even a small part of your userbase.
