Sounds like it could potentially be hardware related, have you set openwrt to default settings at all? Typical question, but it'll rule out hardware if it suddenly works again... Keep a USB with OPENWRT fresh if you want to diagnose things sometimes. :)
I've seen issues with the country codes causing instability if the wifi chip is defined for a specific set (unlikely). If not, view the wifi graph potentially to look at your signal to noise ratio, it's not very accurate as you can imagine, but something out of whack may show.
Another bet may be to check for any USB settings in the bios potentially - I don't personally own that NUC but I do know changing the USB to 2.0 may resolve some issues; if the wifi card is lower than the bandwidth of USB of course.
Maybe check the antenna connections? Have you got a photo to show how you installed them, there may be an issue there.

I had an enourmous gain in performance going from 16gb to 32gb of Ram, I really underestimated what about a hundred mods or so will do to your sanity when you watch your ship blow up frame by frame over several minutes... In excellent quality of course!
I've been trying Scansat for resources for my SSTO... Seems a bit hit or miss with me, understimated the lack of resources I'd find, kept taking the wrong scanners too, so just like yourself, I have too travelled far defying all the odds, only to find my struggle invalidated within seconds when I go "Wait... How the F did I not put that in my inventory!?" or the game just resets my crew before launch and I've only sent a bunch of pilots. ¬_¬
There's always something, the best part is waiting for it to load, halfway through loading going "OH I FORGOT THIS!" and instantly have to return to the VAB/SPH and wait for it to load again... KSP is definitely a commitment.

Literally only found this out the other day, great comment. I needed head tracking for beamng to complete my setup and found my phone's camera obviously outperformed my webcam. No latency over usb! Anyone wanting to know an easy way to head track with a webcam or phone should try to use droidcam with Open track. :)

Two accounts. One I used to moderate that I made in 2009, and my other account was made about 10 years ago.
Used RIF on mobile and RES on desktop.
Now I use neither, deleted my moderator account and just left my more personal account to rot. (Don't want to delete everything on that one just yet).

Untill the Kraken appears and detonates my 700,000 valued ssto in career mode because I released a small probe from it. Sigh
I do like the look of Kitbash, you can definitely see polished elements and related ideas of ksp from the original developer.
Seems cool though, I enjoyed watching Matt play along with one of the op developers. Shame a lot of the original development team aren't involved with KSP2. Really was hoping for at least better performance jumping from the ancient spaghetti code of ksp... I guess I'll wait until that's sorted and science comes out.
