I put this on my laptop, too. It has games that teach kids how to use a mouse and keyboard.
I love this app. So many activities to keep them occupied and quiet. Got my child playing the card match game this morning.
For younger kids, Sesame Street and PBS Kids have great learning game apps that don’t collect much data. My kid also enjoyed the Lego Duplo games.
For drawing Sketchbook is good.

My kids are a wee bit older. They get a kick out of meeting with friends in Minecraft and Fortnite. It's nice because both have crossplay, so I can join them from my gaming PC.
Make sure you ratchet down the parental controls on whatever platforms they access games like Fortnite or Roblox on. One thing I didn’t realize about PlayStation 5 is that people who aren’t on your friends list can send unsolicited voice chat requests.

I think I've got Fortnite covered. They can only friend with a sign off from me, and they can only voice chat with friends. I think that's everything I need, but if you have any recommendations, I'm all ears.
Sounds like you have it set right, I just didn’t realize you also have to set the controls up seperately on PlayStation as well as on Fortnite for my son. I had the same settings as you for his Fortnite account but didn’t realize that it didn’t apply to the console as well and another player was able to look him up and sent him voice messages over PlayStation despite not being his friend

I have a 5yo that started Kindergarten this year. We like the Duck Duck Moose games and now that she started school she can do the reading game. These games are free, no ads, and don't require an account.
