I can only speak for my 2 GF kids, but they’ve tried other brands and Schar is still their favorite.

My wife and I are settled on Schar. I have pretty much given up on sandwiches. I recently tried their rye/deli bread and discovered that there are only five (5!) slices in the package. What an odd number. It was good though.
Yeah personally I love the schar artisan bread. A lot of GF bread has almost no fiber in it, but the schar bread has quite a bit in it. Plus the texture and moisture level is respectable too. Loaves are a bit too small though imo although this is a common issue with gf breads.
I don't make a lot of sandwiches, but I too like the schar artisan bread. However it is 5.50 usd ish for a loaf where I am. For a 14.1 oz loaf.
Canyon bakehouse is also good and very available, there's an 18 oz refrigerated loaf and a 15 ish oz shelf loaf like the schar.
Yeah, I use Canyon too. They seem to be everywhere so easily found. I just wish the loafs weren't so tiny, its like play bread.
Generally though, I just avoid bread, I find corn tortillas to be a suitable replacement for most other things. Like i'll have a toasted corn tortilla instead of toast with breakfast.
Canyon bakehouse has a bigger loaf, but it is not available everywhere. IDK which grocery stores you have available, but I'm sure I've seen it at publix and maybe kroger. It's pricey though, mo' bread mo' money.
There's also aldi bread, which is not much more money but the size of the slice is significantly bigger. However, I can't have aldi bread b/c it has peas in it and I can't have peas either :sob:
Yeah corn tortillas are nice. But they are kind of small... mission has some that are a bit bigger but they're still small.
I miss this English brand I use to get in the Netherlands. Don’t recall the name. Real sized bread and pretty good tastes.
Who ever loaded it would smash their thumb into it intentionally which drove me mad.
I’m here in the US it’s the Costco Brand.
We've been eating frozen bagels from O'Doughs and their sandwhich bread is also pretty good. Frozen though.
I really like Against the Grain
I’ve been using Canton Bakehouse “Homestyle” - it’s not as good as Scar artisan, but larger loaf for less $$, and similarly sized and good when lightly toasted.
I've have to keep an eye out for that brand!
Mix 2-3 tbsp of whatever flour sub you like (I've done this with a mix of flax and almond flour IIRC), an egg, salt to taste, and 1tbsp of olive oil. Pour it into a shallow container approximately the shape of a slice of bread, and microwave it for one minute.
This looks hokey as shit, but it turns out pretty okay. Yield is about 1 slice of normal bread.
