The French just can't seem to be satisfied with normal food
Frog legs, snails, birds so decadent you need to hide your shame from God.... Yeah I agree with your assessment.
Not that it makes eating ortolan any better, but the shame thing is made up. It's to inhale the brandy fumes.
Tbf, during the seige of Paris, they were starving and started grabbing anything they could find.
Being French, they would rather starve than not cook whatever they found in the garden or the zoo in a fancy way.
