Not all hobbies are understood by some people. And some people are unable to imagine. There is probably a strong correlation between this.
Just call them simple and move on.
Did you even read the wiki article you linked? I have aphantasia and I promise you that fiction isn't a foreign concept and I have a very active imagination.
I can see where they were going with it, with this:

They're the type of person who calls people simple so they're probably simple and just looked at the Greek meaning of the word and took it as the literal definition.
People with aphantasia can imagine, just not visually.
