Disclaimer I also haven't fought the final boss.
I wouldn't count on the Demon King being a terrible difficult fight. You have to remember that it's a storyline quest, so it has to be achievable by the least common denominator. If you really want a challenge, you should explore the depths under the southwest region of Hyrule Field ;)
You are right, it makes sense.
I actually don't want a very tough fight either, I remember some older games where I wouldn't have any trouble through out the game and then I would get stuck at the final boss. But they have conditioned me to not feel the game has ended until I go through a tough final boss.
I actually did explored those area, but I was mostly running away from things ๐
