In the increasingly likely event that he dies before finishing all the books, what happens? Does his publisher work with his estate to pick someone to finish writing the books?

I think that's what happened with Wheel of Time IIRC, with Brandon Sanderson taking over.

I thought Jordan had picked Sanderson ahead of time, but i just skimmed the wiki and it looks like I misremembered. Jordan was given a terminal diagnosis so he prepared copious notes. When he passed, his widow picked Sanderson because she liked his works and because of a eulogy he wrote for Jordan.
