Maybe this is selective memory but I remember the old dos days differently.

Outside of your capstone games, gloom, and Super Noah's Ark, I seem to remember, most successful clones had their own style.

Hexen, red neck rampage, duke nukem 3d, dark forces, rise of the triad, had unique art styles even when limited by current level design.
