Official source? I haven't checked in a long time, but it's been awhile since I've seen any official source call the Health Ministry numbers into question. Back when they were around 30k or so, it was largely agreed on by the IDF.
"The miraculous resurrection of the dead in Gaza," Israel’s Foreign Minister Israel Katz wrote in a May 13 X post. "The @UN had reduced its estimate of women and children killed in Gaza by 50% and claims that it relied on data from the Hamas Ministry of Health. Anyone who relies on fake data from a terrorist organization in order to promote blood libels against Israel is antisemitic and supports terrorism."

Yeah, that's just the ratios of age and sex for the casualties. He wasn't denying the 35k (at the time) death toll.
In those two statements they never indicated that they are talking about non combattant death being inflated and what the UN meant was that they reduced the numbers because many death couldn't be identified by names rather than that those people who was removed was omitted because they was rather combatants
