Commercial fryers keep a higher, more consistent temperature, which is ideal for frying food. As long as the cook knows what they're doing, keeps the oil fresh, etc., you will always get a better result from a restaurant fryer (not talking about CFA anymore).

It is good for fast food and, despite being packed, you could join a line of 20 cars and still be on your way in under five minutes. They are incredibly efficient and that helps when people are making decisions, especially with a screaming child in the back.
What you're describing is normal adult behavior. Maybe that's what OP meant when they said hand towel, but that's not how I read it. Seemed like the implication was they were worried about cleaning their body with a single towel after a shower.
I love Cajun food, but all of the dishes pretty much taste the same with different textures. Let's not pretend like Louisiana is the mecca of cooking here.

I'll take your money if you're throwing it away. A truck like this would thrive only on opportunism, no one is traveling to get this food. Having it be cash only would absolutely kill it.
