My thoughts exactly! Gino's attitude is also refreshing to see, he genuinely seems to enjoy mentoring. Exciting times ahead!

Did you subscribe to the one on lemmy.world? Then it's the same. When I created this community there was no other foodporn community yet on any of the servers (at least I couldn't find any).

It also seems to be growing nicely, we already crossed the 160 subscriber mark (in one day) 🍻

It's a great dish, and comes in so many variations. It's often just called Tom Yum Noodles, although I always struggled with seeing the connection to the soup. The base might be the same, but cooks get very creative with additional ingredients. When done properly, it's also one of the spiciest dishes you'll find.

Oh wow I miss Ketupat. It's great when dipping it in the Sate sauce! Most vendors in Singapore still give it for free as part of your order, but you have to specifically ask for it. Took me a while to figure that out 😂

Unfortunately it's very hard to find boat noodles outside Thailand, at least in my experience. Especially in Europe this will be difficult to find, due to the preparation with raw pork blood.

If you make it to Thailand, I highly recommend trying this dish. One of my favourites!

True, that's also quite good. I personally prefer the minced (sap) pork (moo) variant. The slightly charred minced meat works really well with the egg yolk and fish sauce, in my opinion.

But that isnwhat makes this such a great dish I think, so many different versions.

I think we'll see a very interesting season. We brought in some great guys, combined with some solid veterans. Let's go!

That's super helpful! Thanks! I'll check there next time before I create a new community 👍
