I agree, but the comment above recommends using it to caramelize onions. Maillard reactions can happen to onions for sure but the result of that is not caramelized onions.

Not to say baking soda couldn't help, I don't know the exact chemistry behind this stuff, but I do know that onion + maillard reaction does not yield caramelized onions

Maillard browning is not caramelization. Maillard is an insanely complex mess of different chemical reactions involving proteins, while caramelization is just sugar and heat.

I think even if it is all in your head, confronting the guy about it is still worthwhile. If it's all harmless friendliness that's making you uncomfortable without him knowing it, then bringing it up will let him know

I usually get these little dudes in the summer. I let them be when I can stomach it, but I have this one lamp at my desk pointed up at the wall to give me some indirect light. Occasionally a house centipede will crawl along in front of the light and cast a really long shadow to freak me the hell out.
