I think the real question is whether those people are playing Minecraft at all after 2 weeks. Some people only play a little bit then put the game down until the next update. If thats the case then there's not really a point in starting a server. If they are still playing Minecraft then ask them what they're doing that makes it more compelling. I sympathize with your struggle, my friend group went through the same cycle for about a year, server 3 was about 6 months ago. Sometimes people just aren't into Minecraft as much as you are.
When it comes to Java there are very few people who would fall under the definition of playing "Vanilla" Minecraft. Almost everyone uses Optifine or Sodium. I would also say that using any resource pack still counts as vanilla, as long as it isn't X-Ray. I would define myself as a mostly vanilla player but I feel like the mostly vanilla devinition is very gray. Some people would say using things like sleeping bags, backpacks, minibosses, and/or extra inventory utilities would be mostly vanilla.
I have a survival world that I play on with my brother and sister (LAN). I have several QOL and Optimization mods but they are all client side. I'm currently testing out Prism Launcher but haven't switched over yet.
There is also a whitelist server that I occasionally play on but only when my siblings grow tired of Minecraft (their interest ebbs and flows with the natural cycle of yearly updates and school). I have tried several times to start a server with my IRL friends but they all last about 2 months then after 4 months another one starts up, server 3 was about 6 months ago, I'm always one of the last to leave. I find that there is no substitute to playing with someone IRL vs. using Discord/VoiceChat, or maybe I'm just shy.
I've only been playing since late 2019 so I still find vanilla Minecraft to be an enriching experience. I'm saving modded for when I finally get tired of vanilla but I've been going for 3 years with no end in sight.
Funnily enough I started playing on Bedrock (Windows 10) but when I started watching Hermitcraft I switch over to Java and never looked back.
Considering that most of the parity changes that have been done to bedrock have been removing features to be more aligned with java, I'd say the devs hold java in a higher regard than you think.

I'll be honest I'm kind of ok with it. I think villager trading has always been a little OP. The only thing is that it does put more emphasis on using anvils to get high level enchantments and those are just broken. I don't want to memorize the order or use a website every time I need to combine enchantments. There shouldn't be a Too Expensive! cap on anvils just let me pay the ridiculous xp markup.
Librarian trades are biome dependent and only master level swamp villagers have mending.
I think it would be useful for people to also say what version they're playing (Java or Bedrock). I'm using the intel integrated graphics to play java on my laptop and it's terrible unless I have 15 optimization mods installed.
Yeah Idk why but it makes more sense to me to have them on the right. Maybe its because I'm right handed.
