I really haven't found a great solution to this, and I really miss some of my old subreddits that weren't as large as things like /r/aww, r/pics, r/gaming, etc.

Just start it. At first there's barely going to be any need to moderate.

I started https://lemmy.world/c/engineeringmemes but it's so small right now it doesn't take almost any work.

I'll handball it off if it ever actually grows to be an unmanageable size for one person.

Just don't make it if you're not committed to handing it off, as I'm not sure what the process would be in the future for subs where the mod can't be reached.

This is a really fantastic point I'd like to emphasize. Being willing to hand off a community to someone more active, who also shares the same vision as you for the space, is really an extremely beneficial tradition to establish in your community.

Agree with this, I've never modded before but I started communities for Arrested Development and for MST3K, just so that they would exist.

Only the latter has really taken off, and even then I've had nothing to really do as a mod (although I've been joined by one of the old mods from the MST3K subreddit).

I started a community and I’m the only one that has posted so far… I don’t see anything different on my screen yet. Will it show up when someone else posts?

I've made 3 and so far no one has posted lol so I wouldn't worry about getting slammed with responsibilities. If it gets too big for me I'll just recruit mods to handle most of it cause I do work full time and have a kid lol.
