Revelations 13:1-2:

And I stood upon the sand of the sea, and saw a beast rise up out of the sea, having seven heads and ten horns, and upon his horns ten crowns, and upon his heads the name of blasphemy.

And the beast which I saw was like unto a leopard, and his feet were as the feet of a bear, and his mouth as the mouth of a lion: and the dragon gave him his power, and his seat, and great authority.

I think that it's gonna be tough to convince the generative AIs to render the Beast.

You'd likely need a model trained specifically for creating a single entity with multiple heads, aside from that it would be pretty easy.

They all do so well with multiple hands and fingers beyond normal human anatomy, wonder why they couldn't figure out multiple heads.

Because very few things have more than one head, the rest of human anatomy we have in multiples and they're in all sorts of positions, heads have a habit of being limited to directly on top of shoulders, and a (usual) maximum of one. So there's just a lack of training data and any attempts to get multiple heads ends up with multiple creatures. In saying that there are workarounds, and it's not that hard to mock up something basic in photoshop and then AI paint over it.

Not enough eyes for it to be biblically accurate.

You're thinking of seraphim, beings of six wings and many eyes, or ophanim, beings of wheels and eyes, two of three celestial beings described in Ezekiel, the other is cherubim, multi-headed animals. These are not called angels.

Angels, aka malakim, are human like messengers of Yahweh and said to not have wings.

Hilariously the 'biblically accurate angels' of popular culture are quite the opposite.

Where can one, other than the Bible, read more about this? I'm not opposed to reading the Bible, I'm just not great at deciphering it's language most of the time.

Honestly I just google bits and pieces if I come across anything that interests me. There's a few biblical academic communities that you can get non-proselytizing information from.
