I just started getting into wood burning so I don't actually know what that is. Is it like a cnc machine for pyrography?

Those are pretty cool.

Do you know of any that would be capable to engrave on wood that isn't 100% flat, like a skateboard deck?

Yeah you could make that work adjusting the power. You can also make stencils with it and paint. They sell roller extensions to do things like bottles/tubes
