I personally don't like viscosity. Even with high level arcana. It's one of those enchants my brain finds more annoying than anything.
Stone all the way. But that's use personal preference.

Yeah I don't like viscosity because if I'm getting hit I'm already doing it wrong, and a different enchantment might have let me avoid the hit to begin with
Fair enough. I also used to scoff at it, but changed my mind due to that run. Now I can at least settle for it if I cant get rare glyph when I got hi RoArcana
I used to be opposite. Over reliant on viscosity and seeing it as the best enchant ever. Different experiences
That's not a simple answer since damage reduction provided by stone depends on your evasion and enemy accuracy. However, at low arcana levels stone definitely beats viscosity since the boost goes into increasing the portion of damage deferred first before providing any actual damage reduction. At very high levels, though, viscosity wins since stone is hard capped at 75%.
In your case specifically, damage would be reduced by ~80%, definitely outperforming stone.
There are some number that I just know. Thanks for the info!
I have Arcana +5, Evasion +2, and Plate +3 with Stone, and just passed the Dwarf king with next to zero damage taken. Only one in about 20 physical attacks made damage. Magic is another story...
Well in your case, the RoEvasion helps the Stone, perhaps a lot.
