After a glorious birthday cream tea yesterday I've realised I've overestimated just how much clotted cream I would need and have a veritable dairy of leftovers. The scones are all gone and the rest of the strawberries won't be ripe til next week, so anyone got any recipes or ideas with what I can do with a large tub of Rodda's finest?

Clotted cream freezes no problem. Just pop it in the freezer until the strawberries are ready.

Use it in a curry! Especially for something like Butter Chicken. Once you've got to the stage of making the gravy, add your clotted cream and let it cook down with all the spices. Adds a wonderful buttery element to the curry.

Can I borrow your ice cream maker? Every time I've tried to hand whisk ice cream it's turned into a crystalline (but still tasty) mess.

What no one suggesting thunder and lighting? Some thick crunchy white bread, clotted cream drizzle with golden syrup. Definitely the way to use up the leftovers. https://www.roddas.co.uk/recipes/thunder-and-lightning/
