Because that is how it is pronounced in Czech
Is the video author Czech? Because the keyboard is not pronounced like that and even that link has 2 different pronunciations.
As native Czech I can assure you that the video author certainly doesn't pronounce it like a Czech. It sounds like a typical attempt of a native English speaker to pronounce it the Czech way.
As for the name of the keyboard, you are probably right. The inventor of the keyboard was already born in the US, so his name should most probably be pronounced with English r and not ř.
