Lol. I thought a cup of sour cream was a lot. You could always add more, and/or have some on the side.
Stroganoff is primarily a vehicle for sour cream. Much like baked potatoes.
Just as cake is a delivery vehicle for frosting.

Chocolate cupcakes hot out of the oven are my birthday treat. I leave the rest unfrosted so I can nuke them for 10-15s on subsequent days.

Love a good beef stroganoff, but beef is so damn expensive!
I've made mushroom stroganoff before. It's not the same as beef, but still very tasty. Just bump up the amount of mushrooms you use and throw in some meatier varieties like shiitake, oyster, chicken of the woods, lions mane, etc.
Especially tenderloin. You could use chuck instead - you'd want to tenderize it and/or braise it for a while to make it more tender prior to adding it to the recipe. I'd honestly use chuck instead, since it has more flavor.
