Can we get more details on the recipe please? And I agree with captmaniac pine nuts wod add some great flavor to this.
It's a recipe I've been working on for a bit, here's my current measurements:
- 1lb pasta
- 1.5lb boneless skinless chicken breast
- 6oz basil pesto (one small jar)
- 1 cup heavy cream
- 6oz sun dried tomatoes (one small jar, we just add a lot from the big jar)
- 8oz gorgonzola Same directions as above: cook pasta while you sauté chicken in oil (season with salt and pepper), simmer pesto and cream together, drain pasta, combine all ingredients in the pot you used to boil the pasta and stir, then serve with pepper and parm.
The pine nuts do sound great!

Costco pinenuts is an excellent addition to this recipe. Brown them in a skillet before adding.
Throw frozen Normandy vegetables on a sheet pan. Thaw frozen chicken breast or thighs in microwave, cut up into chunks and mix into the vegetables on the pan. Bake at 400 for 20 minutes, then broil for 5 minutes to add some color. Simple, inexpensive, healthy and only one pan to clean!
