It's a recipe I've been working on for a bit, here's my current measurements:

  • 1lb pasta
  • 1.5lb boneless skinless chicken breast
  • 6oz basil pesto (one small jar)
  • 1 cup heavy cream
  • 6oz sun dried tomatoes (one small jar, we just add a lot from the big jar)
  • 8oz gorgonzola Same directions as above: cook pasta while you sauté chicken in oil (season with salt and pepper), simmer pesto and cream together, drain pasta, combine all ingredients in the pot you used to boil the pasta and stir, then serve with pepper and parm.

The pine nuts do sound great!

What's your favorite easy/lazy meal prep with mainly Costco ingredients? Mine is a creamy chicken pesto pasta:

  • Cook chicken breast in a pan while boiling short pasta
  • Simmer together heavy cream and Kirkland pesto
  • Combine cooked pasta, chicken, sauce, sun dried tomatoes (that huge jar in the sauce aisle), and mix in gorgonzola/blue cheese if you have it. Serve with parmesan and pepper.

Been using porkbun as the registrar and cloudflare for Dns, no complaints. I like the cloudflare interface better and like having Dns and registrar separate.
