I worked on a few movies with him.

Here’s the exact exchange I overheard between him and a PA on the set of Finestkind:

PA: “Can I get you anything, Mr. Jones?”

Tommy Lee Jones: “I’ll have some hot tea please.”

PA: “We have Oolong tea, Earl Grey, Green Tea, or would you like something else?”

Tommy Lee Jones: “I’d like a hot cup of too many fucking questions!”

So yeah. This is EXACTLY what he’s like. He does NOT put up with bullshit.

There’s not putting up with bullshit and there’s being an asshole, he lands on either side depending. Him hating Jim Carrey for no reason is an asshole move, being a dick to the person serving you and trying to get you what you like is also an asshole move. He could have said “earl grey please” with less words than he used to bitch out the poor employee for doing their job.

I think actors who talk down to and treat the crew badly are pieces of shit, meanwhile hot hear about other actors taking the crew out for drinks and treating them as equals

He’s truly not very nice! In fact, he’s (IMO) the polar opposite of someone classy like the late Christopher Plummer (RIP) whom I got to work with on a feature years back.

My ex gf did makeup for Danny Trejo for a super small film many years ago. One day she told me to swing by the set at a specific time to have lunch with him, if I wanted. I did! He was super cool. 10/10 would chow down with him again.

Sous vide is the way to go for steak. Let it sit in the bag with a sprig of rosemary to perfectly cook all the way through, and then add a sear at the very end to finish it.

I do really want to try it cooked that way after watching so many Guga Foods/Sous Vide Everything videos. Seems like a lotta work, though, if you don't have a machine and have to manually boil water and keep an eye on the temp the entire time.

Air fryer does a good job of searing, btw! Let it cool after the bath, then smear it with wagu tallow and air fry it on high for a minute or two on each side. Thems good eatins!

Air fryers are nothing but small convection ovens with fancy pre-sets. I’m a bit mystified that people think you can’t use them for anything other than greasy breaded foods.

My air fryer has a thermometer probe attachment and came with roast pans because it’s made to do everything, including whole chickens, roasts, or steak. (It’s roughly the size of a microwave)

It's actually really good for a reverse sear. The air circulates at a more even temp than a regular oven and can be kept at a nice low consistent heat.

Just pop it in the air fryer at 250f and bring the steak 10 degrees from your desired cooking temp and then finish it off on some cast iron.

Was looking for this comment.

I had an air-fryer long before i started to put steak in it, i just assumed it couldn't come close to doing it myself in a pan.. Till we tried it after an exhausting day. Never went back.

I would also still highly recommend finishing it off in a pan but overal the process is much easier and the steaks reliably good.

Yeap, kinda the epiphany on my end. Had a steak I was wanting to reverse sear but already had the oven set for something else. Figured the air fryer was just a fancy oven and gave it a shot. Steak came out better than normal and have been doing it ever since.

I haven't tried finishing it in the air fryer yet, been worried it might not sear correctly since it's not getting direct heat.

As much as I love smoking meats, steak in a smoker is disappointing every time. I've found that pan frying in cast iron with butter provides the most consistently delicious steaks. Even better than the grill because the all the tasty juices stay in the pan and infuse with the meat.

Edit: Second best is Sous vide, finishing it off on the stove for a good sear (or hit it with a blowtorch to minimize cleanup). Perfect "set and forget" method because the juices also stay with the steak and it won't cook beyond your preset temperature, resulting in a perfect medium-rare every time.

Ain't nobody got any time for that. Imo smokers are overrated for the amount of time and effort you have to deal with them.

If I want to do a fancy steak I'll usually just do a sous vide.
