I'm interested in finding one that truly supports free speech. If something is spam or advertising then it should be removed.

Most moderation is done by individual communities, not instances. You want an instance that's unlikely to defederate with another (basically blocking it). Think of a community as a subreddit, and each instance as a server holding a cluster of them (and usernames). Thanks to the magic of programming and federation, the instances typically work with one another to make it more seamless.

My understanding is that lemmy.world is not prone to defederation. Vlemmy.net had a similar policy but they seem to have gone under a few days after Reddit went stupid.

I thought it would be a bit of both - communities are moderated, but instance admins have a final say in what (and how) communities are moderated. So you would need to ensure that that instance you choose has administrators that effectively allow communities to run with the "speech" you are after.

That said, I would assume any instance that allows "free speech" would quickly fill with hate and racism (and all the other things that people throw under the banner of free speech) and would be defederated quickly - which is a good thing!

And you're sure whatever beef you have is with the admin of the instance, not the moderator of a community? Not gonna lie, you sound like the equivalent of blaming Spez for a comment getting deleted in /r/conservative. Obviously the dude is not without his faults, but if you're going to complain at least aim it at the right place.

And what did lemmy.world do? As you can probably tell, I'm a little skeptical of people demanding "free speech!!!" on a private platform, but am generally not a fan of willy nilly defederation for my own reasons. So humor me - why did I make the wrong move signing up on Lemmy.world from a "free speech" perspective?

I believe "free speech" is the whole deal over at https://exploding-heads.com although you should be aware a lot of places defederated them already.

They seem way more aligned with being supportive of free speech.
