Our cucumber plant is going bonkers.

Fantastic. I don’t know if you plan to pickle them but I love that bumpy texture in a pickle.

One time my cucumber plant was just going insane and I had some that I picked too late. If you get to that point, try what I did:

  1. put a few in the fridge until chilled
  2. slice lengthwise and scoop out the seeds with a spoon
  3. run the chilled seed mash all over your face on a hot day

I was not expecting to read that last sentence. But now I'm curious to try it.

Hollow them out a little more and you could use the shells as tiny gazpacho bowls or to serve watermelon feta salad.

It's really good. Add a bit of mint and olive oil, maybe some balsamic or a squeeze of lemon.

I harvested my first cucumbers yesterday.

Will be traveling for the next two weeks. Hopefully my neighbor who is checking in on the house will enjoy them.

I have to go away for a week. I'm really concerned what size cucumbers I'm going to come back to.
