Do I need to start with the first one? Do they all work well though on Linux?
If you start the first one get a mod called GMDX 9.0 (stick with 9.0 for now). Lots of texture and game play modernization that really makes the game great.
The newer ones with Adam Jensen are prequels, so they add some interesting backstory to the original. IMO playing them in order of release or chronological doesn't really matter.
