I realize this is a year old now, but I'm chiming in anyways.
When I was younger, I would have said Timesplitters 2, or Star Wars Battlefront 2. Both are still great for some couch co-op, but I'm really not into console shooters anymore.
These days, I LOVE Midnight Club 3. Some races demand damned near perfection, but the stakes are so low because you can restart the races at anytime with no penalty. Unless it's a tournament. And it's got an open world element to it, so you can just drive around the city for fun.
Another one I enjoy now is Ys VI: Ark of Napishtim. Pretty sure it's the first 3D Ys game, and it is quite rough compared to Ys VII through IX (haven't played X yet). But it is a decent action RPG, kind of reminiscent of Alundra for the PS1. I'm not a fan of turn-based RPGs, I just want to hit things.
