I would use the axe. The shield doesn't provide much benefit if it's your secondary weapon, since you don't get the bonus armor and block chance. The gauntlet is nice with the grim enchant though, since it gives you a lot of opportunities to proc. So, I'd keep the gauntlet, dump the shield, and use the axe as secondary.
Edit: I've only beat the game with champion once, so take my advice with a grain of salt.
To my understanding being able to hotswap to shield and block damage can be used to deal with evil eye beams (though I'm more of a break LoS kinda player)
That sounds like a good strategy. I try really hard to hug walls and doorways in the demon halls. There are too many things to wreck you out in the open. Having a shield if you get caught out in the open could potentially save your life. Having 3 anks and 2 of them blessed puts you in a pretty good spot to focus on just smashing them before they shoot you though. I guess it depends on wether you want to focus on offensive or defensive playstyles.
