They are made to look like characters from the DLC Honest Hearts for the game Falllout New Vegas.

They're usually yellow (asian). Here they aren't.
The Simpsons family has literally never been represented as Asian, what are you talking about? They're yellow because it's the art style. Here, they're washed out because it's a different art style.

It is the explanation. I thought the premise of the Simpsons as Asian would be a big enough sign that this is a question (why aren’t they yellow?) packaged as a ludicrous joke. I was wrong, apparently.
This happens all the time. people not getting an obvious joke or not getting that it's just an innocent joke. Already got myself banned from an instance for one of the most obvious dumb jokes one can find.
Especially when there’s potential for outrage
I think the main issue is that it just wasn't funny.
They're yellow because Matt Groening wanted people to think there was something wrong with their television sets.
