I was looking at getting some roguelikes / lites (already have ToME, CoQ), unfortunately Cataclysm DDA is not on sale.

Krone Hotel at 90% off looks like a decent choice too. Then there’s Jupiter Hell, which I recently stumbled upon and looks great too.

I’d also like to get some of the FF games, though I’ve played VI, VII, IX and a bit of XII, it would be nice to revisit some of the older ones I haven’t played almost since the PSX era.

FF games are a solid choice. The Pixel Remasters have been very well received and anything that makes the early games more approachable is a solid win in my book. That said, I personally found the 3D version of FFIII (actual 3, not 6) to be phenomenal.

FF Pixel Remasters on SD are an absolute blast.

Holdup, are any of the FF pixel remasters on Steam? I thought they were only on PlayStation?

The Pixel Remasters were on Steam and mobile before they came to Switch and PS4.

They aren't part of the Summer Sale though.

They were originally released on PC. On Steam they're just listed as "Final Fantasy (I-VI)" but it's the pixel remasters AFAIK.
