There are certainly blind dancers. Idk about martial arts but I wouldn't be surprised.
IIRC Toph, in the original, uses a form of martial arts specifically designed for blind people.
According to legend, that style was invented by a blind woman. The Avatar makers didn't know this when they picked it, it was a happy coincidence.
You are aware that some people are not born blind, but rather lose eyesight later in life?
You are aware that the largest pretzel ever made weighed 783.81 kg (1,728 lb) and was assembled in El Salvador?

They are trying to check the disability box while also needing an out for when they choose someone who can actually do the physical aspect. (Yes, a blind person could probably manage on their own, but if you need to choreograph with other people, it might get complicated...that being said, I would love if the actual actress was blind and successful in the role, that would be super cool)
