How do pixelfed instances even work. I imagine the storage requirements are crazy on a busy server.

Makes you wonder how fragile their peace is, if it could be disturbed by a hat.
Markor, Logseq, Notesnook or Joplin are the ones I know off. No idea how light and performant they are though. I think full word processors like collabora are a lot heavier than a simple text editor.

The smaller instances have no choice. The sheer amount of posts and comments there will overwhelm anything short of a server farm.

Which is why it's still not available in Europe. They're waiting until it has critical mass and don't need the dark patterns anymore before rolling it out there.
