I use kokuyo campus smart ring binders filled with their sarasara paper. The paper is fountain pen friendly and the smart ring binders are like notebooks but you can reorganize the pages!

Yes I really do like the medium. I was worried it was going to be too broad but on good quality paper it is not too wide but still very smooth.

It's honestly in a completely different league than the Safari and Al star. I use both of those pens quite often for school and the 2000 is better in basically every way. The nib is so insanely smooth and the craftsmanship is basically perfect. I would highly reccoment it
