While possible, it's also possible Janeway is just fucking with him and where Chakotay hides his booze is an open secret.
That conversation was in the elevator, and Chakotay had just said he wasn't going to talk about what the experience was like because of the temporal prime directive.
Yeah that makes sense, she could totally be messing with him... which I guess would mean the timelines diverged and somewhere in the multiverse there's a Janeway that actually does remember everything! That helps my head-canon at least, thanks.
Maybe it helped her decision to destroy the Caretaker array, having had time to mentally prepare being stranded, and knowing that it would be worth it...
