I can almost taste the recipe. It sounds so good. I love eating soup and I can always sneak in any leftovers or add extra beans when needed.

A place for people who want to eat more fruits and vegetables and less animal products and processed foods.
This includes adding more vegetables, fruits, beans, whole grains, nuts/seeds. While eliminating meat, dairy, eggs, and fish. It is also avoids added salt, oil and sugar as much as possible
We are not looking for perfect adherence to any one particular eating style of WFPB.
Posts should be about eating whole food plant based foods most of the time.
Recipes should not include animal products.

i'd imagine that the oil could be completely omitted and the result would still be great, especially so if you subbed the heavy cream for coconut cream instead of soy milk (but i also often use soy milk to add creaminess to recipes and find it works great, if you are willing to reduce it a bit more).
