EVERYONE is interesting.
To know that you'd have to know everyone.
Or, most people don't give themselves credit.
I'm more than willing to talk to someone who thinks they are not interesting.
I'm sure many people who think of themselves as not interesting will be interesting to someone.
But there are also at least a few boring people out there I think.

I too find it interesting how uninteresting some people are.
They're almost 100% interesting, but they don't like talking about themselves or hide secrets, etc., which are interesting traits, if not difficult to crack open.
I've been acquainted with a good few extremely uninteresting people.
I feel like it would be better to phrase that as you found them uninteresting.
Or did you mean they are un-interesting in a way most of society would say someone is uninteresting. Like they aren't interesting because they don't follow sports or TV shows? Or they only talk about work or kids? Those people can still be interesting, just to different types of people.
They may not be interested in being interesting for other people?
It's very tough to describe people who aren't interesting in order to tell you why they're not interesting, now I've set about doing it. It's like describing a colour.
Because being uninteresting (or the perception of it) is in of itself...interesting.
Well, in the real world where normal people live, no, but philosophically, fine yeah. But then if you want to be philosophical I'd go further and call that equivocation between "interesting: piquing my curiosity in a way I like" and "interesting: some remark can be made", and I don't find the latter interesting to think about anyway.
I once went on a blind date with a girl and asked her if she saw [popular movie], just to start a convo. Her response: "I don't like movies."
She went on a rant about movies. I switched to music. She then went on a rant about music. I switched to video games. No rant, just a not interested. I asked her what she did with her time. Nothing.
She then ranted about the food, and the service. Surprisingly she said our date was going well.
To this day, I'm pretty sure she she is just walks around hating things and being uninteresting.

And I think a lot of people don’t realise they’re interesting. We’re just not interesting to everyone we meet and that’s ok.
Fair enough, but who would explicitly say "I'm interesting"?
Anyone could. There's nothing wrong with thinking that you're an interesting person. Or saying it.
In some cases it might sound weird and/or immodest. IMO it's something that primarily the others should judge.
